This one is a firm favourite of Mum's, she takes it everywhere and is always loved: easy, cheap to make, and delicious! Great for back yard barbeques/dinner parties served with crusty bread.
1/2 packet yellow split peas
1 small red onion, finely diced
1/4 cup olive oil
juice of 1 lemon
salt to taste
parsley, chopped red onion, and olive oil garnish
Wash split peas and cook with red onion (save a little onion for garnish) with lid off.
When it starts to fall apart and go mushy add salt to taste and stir. Continue to cook until it thickens. Take off heat. Add olive oil and juice of lemon.
Garnish with chopped onion, parsley, and a drizzle of olive oil on top.
